Creamy Roasted Sweet Potato Sage Soup

Happy #SoupySunday 😉 enjoyed my weekly soup for my soup day for dinner – after having a lot delicious food at the VEGAN PICNIC 😀 The weather was perfect in the afternoon (the whole day:D) and I had a lovely time at Donauinsel 😀  Sunshine, happiness and joy 😀 My soup for this sunny (and political bc of the Presidential Election Day in Austria) day was actually rather “autumn” style but a creamy soup is always in season 😉 CREAMY SWEET POTATO SAGE SOUP 😀 for I still love my sweet potatoes a lot! And sage 😀 I made this soup rather spicy – a chilled chilli spicy 😉 and it tasted perfectly along with the sage 🙂 nice to finish a wonderful weekend:D

2 serves

You need :

  • 2-3 sweet potatoes, peeled and chopped (you don´t have to peel them :D)
  • 2-4 cups water
  • 1 tsp veg stock powder
  • 1 handful (dried) sage
  • 1 tsp chilli flakes
  • 1 tsp paprika powder (Optional)
  • Spices, herbs, salt & pepper to taste

Preheat the oven to 180°C. Chop up the sweet potatoes and add them on a lined baking tray with a drizzle of oil (optional), spices and herbs and n place in the oven for about 30 minutes. Once the veg is roasted, let it cool down a little after removing from the oven and poor into blender with water, stock powder, herbs and spices. Blend until desired consistency and transfer the creamy in a saucepan to heat up a little bit:D

Then pour the soup into bowls immdiately and serve 🙂
