Lemon Rice w/ Herbs, Dried Apricots & Pistachios (inspired by @naturally.sassy)

Happy #SassySaturday 😀 today was meant to be the 1st day since April I didn’t exercise! My oblique is still in pain and moving hurts too much :/ a bit depressing but necessary break! I stayed in bed until grocery shopping, had breakfast in bed and simply tried to “relax”! But around lunch time I made my way to the kitchen bc no matter if I do sports or not – I’m hungry! 😉 especially around lunch time;) I chose to prepare and try a nice recipe, #sassylicous of course – LEMON-INFUSED WILD RICE w/ HERBS, DRIED APRICOT & ROASRED PISTACHIOS 😀 inspired by the recipe in @naturally.sassy´s cookbook 😀 and though I was a bit skeptical at first bc I didn’t think that arugula really matches with the other ingredients… But it was super good! The sweet taste of my dried apricots with the roasted one of the pistachios + the slight bitterness of arugula aka rocket was a wonderful combo 😉 I used red wild rice only 😉 it’s Austrian one 😉 yep the 1st Austrian rice ever! From “Ja!Natürlich” 😉 big recommendation;) also the whole recipe 😉 you can also prepare it for your 2Go days 😉 you can easily take it with you 😀

You need :

  • 1/2 cup brown/wild rice (you can mix – red, brown, black rice as you like :D)
  • 1 cup water
  • 1/2 cup dried apricots (you can also use pitted dates instead)
  • 1 cup boiling water (for the apricots)
  • 1/3 cup raw pistachios
  • 1 handful of rocket salad/arugula
  • 1 handful/Some fresh herbs of choice – mint, parsley, basil, coriander, …
  • Juice of 1 lemon
  • Season to taste

Preheat the oven to 180°C and, at the same time, heat the water in a saucepan.Spread your pistachios on a baking tray, place in the oven and roast for around 5-7 minutes until toasted (make sure they don´t burn). Remove them from the oven and chop them into small chunks and set aside.

Meanwhile, heat water in a saucepan, add the rice and bring to a boil. Then reduce the heat and simmer for about 30-40 minutes until tender (the cooking time differs – depending on what rice you use :); add more water if needed; I also already added some lemon juice into the water during cooking period). While the rice is cooking, put the apricots into a bowl and cover with boiling water. Leave to soak for a few minutes before you drain the apricots and chop them into small pieces. When the rice is done, drain and rinse with cold water. Place the cooked rice into a large bowl with rocket salad, roasted pistachio chunks, apricot pieces and some chopped herbs. Add lemon juice, spices, pepper, …, oil as you like and mix very well 😀
