Goji-Tomato Gazpacho & Falafel Salad

 Happy #SoupySunday 😀 Again I decided to have a super easy peasy and quick lunch this afternoon – simply just bc I was super lazy and the day was over soo quick – time went by like – whoop 😛 So, what did I make for lunch? A Gazpacho again. Especially bc I also didn´t really crave for warm and hot dishes 😛 Inspired by a recipe I found on the VeganBlatt homepage I recreate a GOJI-TOMATO GAZPACHO 😀 very fruity and fresh 😀 The combination of gojis and veg was very yum and it´s all super duper easy to make. In no time. I think it´s an ideal soupy dish for hot summer days (but also now during spring 😉 )

But this wasn´t enough food for me! Of course! AnnaBelle also made herself a FALAFEL SALAD w/ tummy-yummy TAHINI-TAMARI-LEMON SAUCE 😀 I wanted to have falafels the whole week 😉 so why not on Sunday 😀 Best day to have them with a fresh and colorful salad 😀

This is how the day went by. And now it´s already evening time and I have to prepare myself for the upcoming week…puhhh 😉 But the recipes are up 😉

Goji-Tomato Gazpacho


2 serves

You need :

  • 3-5 tomatoes, chopped
  • 1/2 cucumber, chopped
  • 1/2 red bell pepper (Optional)
  • 1 stalk of celery
  • Juice of 1/2 lemon
  • 1 tbs chilli flakes
  • A pinch paprika spice
  • A pinch cayenne
  • 1/2 onion chopped
  • 2 cloves of garlic
  • 2 tbs goji berries
  • Salt and pepper to taste (Optional)

Mix all ingredients in a blender and blend. The only thing you have to do now – serve and enjoy 😀


Falafel Salad w/ Tahini-Tamari-Lemon Sauce/Dressing


2 serves

You need :

  • Mixed leaf salad of choice
  • 2-3 tomatoes, chopped
  • 1-2 bell pepper(s), chopped
  • 1/2 cucumber, chopped
  • 2 stalks of celery, chopped
  • 1-2 carrots, grated
  • 1 handful pomegranate seeds (Optional)
  • Some falafels – you use bought ones – I recommend Vega Vita or from a falafel store (simply heat them up/fry them using a pan or bake in the oven) or you make them on your own! Recipe below 😀
  • Herbs of choice
  • Spices of choice
  • Sesame seeds for topping (you can use any other you prefer)

Simply place all prepared salad ingredients in a big salad bowl and mix. Top with the TAHINI-TAMARI-LEMON Sauce and seeds 😀


  • 1 can / 1-2 cups chickpeas, cooked, rinsed and drained (depends wheter you´re using a can or cook them yourself ;))
  • 1/2 courgette, grated (Optional)
  • 1/2-1 carrot, grated (Optional)
  • 1 handful mushrooms, finely chopped (Optional)
  • Spices of choice like cumin, cayenne, chill flakes, paprika powder, curry, turmeric, cinnamon, coriander, ginger, …
  • Herbs of choice like coriander, parsley, mint, dill,…
  • 1-2 cloves of garlic
  • 1/2 onion, chopped
  • 1 tsp tahini (Optional)

Prepare the chickpeas and veg for your falafels 😉 If using dry chickpeas – soak them overnight before cooking until soft. In a blender, blend the chickpeas with a bit water. Transfer to a bowl and mix with remaining ingredients. Preheat the oven to 160°C. Then, form balls and place them on a prepared baking tray. Bake them in the oven for about 25-30 minutes until golden brown and crispy.
