Saturday Salad Bowl (inspired by @naturally.sassy)

Happy #SassySaturday 😀 weekend finally and much to do! Workout, meeting, swimming and party again tonight! 😉 but much fun and sunshine! But before I made my way to my swim I had lunch, sassylicous lunch:D I made myself a salad bowl – SATURDAY SALAD BOWL inspired by @naturally.sassy´s recipe for BABY LEAF, POMEGRANATE, AVOCADO & SWEET POTATO SALAD w/ ORANGE DRESSING from her cookbook 😀 It absolutely made my feel fine before swim 😀 perfect salad for renew the energy and ideal and refreshing during spring time 😀 mine is including the wonderful combo of sweet potato, carrot, pomegranate and ginger on mixed leaf salad + the fruity ORANGE DRESSING 😀 Fresh and fruity and also great 2 Go 😀

You need :

  • 1 medium-sized sweet potato, washed, peeled (I didn´t) and cubed
  • 1 tbs olive oil for roasting (and/or balsamic vinegar)
  • Spices, salt, pepper (of choice)
  • 1/2-1 avocado, cut into slices or cubes
  • 2 carrots, grated
  • (Mixed) leaf salad of choice
  • 1 handful fresh coriander (Optional)
  • 1/4-1/2 cup pomegranate seeds
  • 1 knob of ginger, chopped finely
  • Spices and herbs of choice

Orange Dressing 

  • 1/2 orange, peeled
  • 1 tsp vinegar (you can also skip – like me for I´m a bit allergic to apple cider vinegar)
  • 1-2 tsp tamari
  • 1 tbs tahini or nut/almond butter
  • 1-2 tbs water
  • Some grated ginger (Optional)
  • A pinch of cayene and turmeric (Optional)

Preheat the oven to 180°C. Prepare the sweet potato for roasting, place on a baking tray, drizzle with olive (you can also drizzle with balsamic vinegar – it´s super yum) and spices of choice. Place in the oven and roast for about 25-30 minutes.

Meanwhile, prepare the dressing by combining all ingredients in a blender and blend until smooth (if using orange juice instead of an orange you can also mix the ingredients in a bowl using a fork or spoon :)). Now, also grate the carrots, slice the avo, … you know 😀 And wash, rinse and drain the salad leaves/coriander 😀

Then, as soon as your sweet potato cubes are ready, place the salad leaves in a bowl along with the grated carrot, avocado slices, seeds, ginger and dressing. Toss well and add roasted sweet potato and some more pomegranate seeds for garnish on top 😀
