GF & Raw – Fruity Pad Thai

 #RaWednesday 😀 a sunny one 😀 At least in always windy Vienna 😀 Today was quite a good day 😀 Weather was fine, I had much time for everything I did – almost day-off bc just 30 minutes of class -, good food (raw obviously ;)) and I met my friend Maggie 😀 Sounds absolutely fine 😀 And I also sat down to write this blogpost! What a productive day! 😀 Inspired by the recipe for PAD THAI (based on @naturally.sassy´s recipe) I already shared on my blog months ago I decided to create a fresh and fruity version for spring 😀 raw and glutenfree 😀 full of vitamins and a great and filling energy boost for any day 😀 I had it for dinner this time but it´s never a bad time for refreshing dish 😀 so, I made this FRUITY RAW PAD THAI 😀 served on lettuce 😀 for x-tra greens 😀 and simply bc I like salad quite much 😀 you can use rocket, lamb´s as well as mixed lettuce or also leaf spinach 😀 and it´s super delicious! I like to combine fruits and veg in salads a lot bc it adds a special taste. And during spring and summer there is no excuse – foods has to be fresh, colorful and full of fun 😀 fruity days are about to happen 😉 (not a big thing for me btw 😉 bc I have that colorful fruitiness every day 😛 ;))

The recipe is also quite a quickie (as long as you´ve cut the veg and fruit before! It always takes me ages in my view 😉 ) This healthy little fruity pad-thai version will make you happy too! I´m sure 😀

You need :

  • 2 servings lettuce of choice (lamb´s lettuce, rocket salad, mixed salad, …)
  • 2-4 courgettes, peeled into zoodles/courgetti ( (depending on your hunger and preferance and also on the seize of the courgettes 😉 )
  • 2-3 carrots, peeled into carrot noodles
  • 1-2 (red) bell peppers, sliced
  • 1-2 handfuls cherry tomatoes, halved
  • Further veg of choice – cucumber, celery, asparagus, … (Optional)
  • 1/2-1 mango, chopped (you can also use kiwi or even papaya instead)
  • 1-2 oranges, chopped/sliced
  • 1 cup of berries – strawberries, raspberries, blueberries, gojis, …(Optional)
  • Seeds – sesame seeds, pumpkin seeds, flax seeds, hemp seeds, chia seeds, … (Optional)
  • Fresh coriander on top (Optional)

Start by preparing the vegetables and fruits before creating the bowl. Chop and slice them up and put to the side into a bowl while making the courgette noodles. You can prepare the zoodles using a spiralizer but if you don´t have one, it´s no problem bc it´s not necessary 😀 simply use a simple peeler and peel (may end up a little thicker like fettucini but delish anyway + it´s a bit of workout;) ). Do the same with the carrots. Wash, rinse and drain your lettuce, place it in a big bowl and then add the courgette and carrot noodles with the veggies and fruits and continue by preparing the sauce (recipe below). Pour the sauce onto the courgetti and fruits n veggies and mix until well combined. Top it with seeds and nuts and enjoy 😀

  
Almond-Orange Sauce

  • 2 -3 tbs raw almond butter
  • Juice of 1 orange
  • 1-2 dates, pitted
  • Juice of 1/2 lemon
  • 1 thump-siced piece of ginger (Optional)

For the sauce, simply mix the ingredients in blender and blend until smooth.
