Spring-Like Potato Cucumber Soup

 Happy #SoupySunday 😀 Last Sunday I was quite traditional with the NAN´S POTATO SOUP – a soup all inspired by my grandma´s potato soup recipe!

Today I wanted to prepare another potato soup 😀 I had some potatoes at home and I´m also still in the mood for a potato soup – but not the same! Something fresh, something spring-like 🙂 So I went into the kitchen to get inspired and finally … I decided to use cucumber. 😀 Why not 😀 What came out? my POTATO CUCUMBER SOUP 🙂 a fresh and lovely way to have potato soup during spring time 🙂

You need :

  • 2-3 potatoes, washed, pealed and cubed (I didn´t peal mine btw bc I prefer it with skin)
  • 1/2-1 cucumber, washed chopped
  • 1/2 onion, finely chopped
  • 1 tbs coconut oil
  • 350-500ml veg stock
  • 1-2 tbs dill
  • 1 knob fresh ginger
  • Juice of 1 lemon 
  • Some mint leaves
  • Some soy, rice, coconut or oat cuisine or milk (Optional for creamy version) 
  • Salt and Pepper to season (as needed)
  • Herbs of choice 

 
Heat oil in a pan over a medium high heat, add onion and cook, stirring constantly, until onions have are translucent. Then, add the potato cubes and chopped cucumber (cubed) and braise lightly. Add the stock (or water) and cook until the veg is soft, about 20-25 minutes. Then, let cool down for a few minued before you place the soup together with dill, ginger, lemon juice and herbs in a blender or use a stick blender and blend the soup until smooth as desired (leave a few potato and cucumber cubes aside for topping). Transfer back into the pot and heat again if needed (you can also enjoy cold ;)). Finally season to taste and add cuisine or milk if you want.
