Miso Buckwheat with Black Beans, Courgette & Lime (recipe by @naturallysassy)

 Happy #SassySaturday 🙂 Last Saturday I left out my #sassylicious recipe bc I had no time but this time I made it 😀 A perfect lunch recipe and I also made the GREEN GODDESS SMOOTHIE (LINK) 😀 I had @naturally.sassy ‘s MISO BUCKWHEAT with BLACK BEANS, COURGETTE & LIME 😀 So good, I swear! Asian touch combined with buck and beans and courgette and the lime to make the taste complete and super delicious! It was the ideal post-workout meal on my 1st day of holidays 🙂

You need :

  • 1 cup buckwheat
  • 4 cups water
  • 2 tbs brown rice miso
  • 2 courgettes
  • 1 cup/can black beans, drained and rinsed
  • Juice of 1 lime

Start by adding the buckwheat, miso paste and water to your pan over high heat, bring to the boil and reduce heat. Simmer for around 15 minutes, until all the water has absorbed and the buckwheat is cooked. Meanwhile with a pealer, peal strips of the courgettes and drain and rinse the black beans. Then, add the black beans and courgette to the buckwheat pot just before it’s cooked through. When it’s all cooked, squeeze the juice of one lime over it and mix through.

  
Serve and Enjoy 😀 you can garnish this with sesame, roasted cashews or other nuts or pumpkin seeds 😀
