Sweet² Potato Pancakes

Happy #PancakeSunday my friends 😀 just another (part-time) lazy Sunday in my crib 😉 Ok, I also did some cleaning and later on I will go to the theater but basically I´ll keep it calm and relaxed 😀 maybe a bit fitness to keep moving 😀 I´m still super sad that my mum wasn´t able to come to Vienna bc of her injury but I wish her well and I hope she is able next week 😀 We want to visit VEGAN PLANET fair next weekend 😀 Are you interested btw bc I  plan to write a bit or maybe a whole blogpost about what I see and experience 😀 There are also some things in the making for my blog 😀 stay tuned 😀 I´m working on bigger topic posts, also bc  I have little time to write entries so I focus on longterm projects 😀

Talking of bigger projcect…next weekend is the 1sr Advent 😀 What does that mean?! YEEESSS! 😉 It´s time for the ADVENT CREATIONS!!!! 😀 Starting by next Sunday, I will create 4 new advent themed pancake creations 😀 Like I did last year – LINK 😀 Are you excited? I am!!! They´re going to be awesome!!! Be prepared for massive, tasty pancakeporn 😀 And, like last year, I will add them to my blog on the 4th Advent Sunday after preaparing the 4th and last of this years ADVENT CREATIONS 😀 Yes, I´ll share them all together in one post – bc they are family, ADVENT PANCAKES family 😀

So, this means…today is the last #PancakeSunday blogpost until 20th of Dec. when the ADVENT CREATION are going to be uploaded 😀 Today is the last Sunday before my 4 week specials 😀 and also the last of my autumn beauties this year 😀 (I already planned the creations for autumn 2016! = #PancakeSunday will be happening until December 2016…at the minimum! Bc I´d love to continue my project the next few years and, as far as I know now, I have still loads!!! of ideas and things I´d love to try 😉

Now, it´s time to show the stack of the day – autumnal spiced BUCKWHEAT SWEET² POTATO PANCAKES 😀 superscript bc it´s a sweet (not hearty! 😉 ) stack 😀 To some of you it may sounds weird to hear about Sweet Potato Pancakes 😀 but it´s the same as it´s with the Pumpkin Spice ones … it turns out heavenly and wonderful tasty 😀 especially if you like sweet potatoes 😀 If not, it´s not the right thing for you, of course 😉 but for me = ❤ 😀 I came up with the idea in September while planning the upcoming creations and since then I saw many sweet potato pancakes on Instagram, created by the lovely bloggers I follow 😀 it made me smile bc we had the same ideas 😀 As a little extra I will also share the links to their versions below 😀 it´s my pre-advent gift to you 😉 Anyway, my creation was wonderful fluffy and tasty! The only thing missing was my mum 😀 She would love them too 😀 I´m sure 😀

You need :

  • 2/3 cup buckwheat flour (non-glutenfree idea is whole grain spelt flour – 1 cup; or other glutenfree ones like rice or brown millet flour)
  • 1 tbs baking powder
  • A pinch of salt
  • 3/4 dairy free milk, preferably (gf) oat milk or almond milk
  • 2 tbs coconut oil
  • 1/4 cup sweet potato puree
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract or vanilla (Optional)
  • 1/2 tsp cardamon (Optional)
  • For CHOCOLATE version add some raw cacao and carob powder 😀
  • Sweetener, grated nuts/almonds, dates, raisins,… (Optional)
  • Oil for the pan (I use a coconut oil)

You have 2 ways to prepare the sweet potato puree – roasting in the oven for 25-30 minutes and pealing the sweet potato and then simply spooning the roasted mash into a jar OR pealing, cubing and steaming the sweet potato until soft and then, mashing it with a fork + putting it into a jar as well 😉  Mix the dry ingredients (flour, baking powder, salt) in a bowl, add the milk and oil and stir until well combined! Now add the sweet potato puree, spices, and other desired ingredients to taste and finish. Heat oil in a pan and bake the pancakes on both sides 🙂

I topped mine with ORANGE INFUSED MAPLE SYRUP (recipe by @connoisseurusveg; Link below ;)), tangerine, nana slices, blueberbs, walnuts and sweet potato puree 🙂
