Coco Walnut Pancakes

Happy #PancakeSunday 😀 a successful week is over and a very needed and well deserved rest and relax day has come 😀 Had a very lovly morning with my mum 😀 we talked a bit about the past few days and about the future – dreams, wishes and ideas – and we enjoyed every single minute like every other Sunday before 😀 It´s such a great idea that I want to continue this Sunday-Family Day event bc it makes our relationship so strong and we simply have the most amazing time together. Family is very important! 😀 The people that give us the strength and power to succeeded, the people that are there for us whenever we need them in good and bad days. The memories we make doing things together are much more important than any other things in life. It´s what makes life so unique and special. 😀

For breakfast we enjoyed another super duper love pancake stack ❤ this time having BUCKWHEAT COCO-WALNUT PANCAKES (plain and choc version) 😀 The combination of coconut and walnuts is incredible. I came up with this idea two weeks ago but postponed it to today 😀 It´s been a while since my last coconutty pancake creations so it was time for a new version. Absolutely gorgeous (and pretty stack) to celebrate an awesome week, my 1st week in Vienna, perfectly 😉

You need :

  • 1/3 cup buckwheat flour (non-glutenfree idea is whole grain spelt flour – 1 cup; or other glutenfree ones like rice or brown millet flour)
  • 1/4 cup grated walnuts
  • 1/4 cup coconut flakes
  • 1 tbs baking powder
  • A pinch of salt
  • 3/4 dairy free milk, preferably coconut milk 😉
  • 2 tbs coconut oil or walnut oil
  • For a CHOCOLATE version – add  raw cacao powder and carob powder into the dough 😉
  • 1 tsp lemon juice, cinnamon, vanilla,mashed nana, flavors, … (Optional)
  • Sweetener is optional too
  • Oil for the pan (I use a coconut oil)

Mix the dry ingredients (flour, grated nuts, coconut flakes, baking powder, salt) in a bowl, add the milk and oil and stir until well combined! Now you can add in other desired ingredients too to taste. Heat oil in a pan and bake the pancakes on both sides 🙂

I topped them with coconut flakes, coconut chips, walnuts and blueberbs 😀
