GF Pad-Thai with Tamari Roasted Almonds (recipe by @naturallysassy)


Lunch Time again 😀 lunch became my 2nd favorite meal of day (no. 1 will always be breakfast ❤ especially today 😉 I had French Toast <3). Since I like to check out my favorite food blogs every now and then (weekly actually) I also look up what some of them share on YouTube 😀 some have their own channels or get featured on others. It´s another effective way to get inspired – even more than usual bc I can listen to your big idols while watching them preparing 😀 It´s the best drug for food lovers like me! Anyway, one of ladies also active via YouTube videos is my biggest inspiration @naturallysassy__ 😀 80% of recipes I tried out lately were created by her 😉 and for those who actually read my blog post already knew it 😉 so it´s no news or surprise anymore anytime I recreate a recipe from Saskia´s blog! Today I also made one of hers but this time it´s a recipe I found on YouTube 😀 Though she has her own channel (LINK) over there the recipe can be found on the Tonic Channel 😉 The dish I prepared, GLUTEN FREE PAD-THAI with TAMARI ROASTED ALMONDS  (a quickie – after 15 min. it is ready 😉 ) got me immediately after watching and I simply needed to prepare it – also bc I basically had all ingredients at home 😀 And to be honest – it wasn´t just THE bomb! It was so incredible and delicious that I wished the bowl wouldn´t get empty ever to enjoy the food until the end of time ❤ this healthy pad-thai version made with courgetti/zoodles and carrotis/carrot noodles + the super tasty, fresh sauce (the sauce ❤ love of my life) match perfectly ❤ I guess I will make this more often in future (also with normal, gluten free pasta noodles bc I think it would taste heavenly too 😉 )

You need :

  • 2 – 6 courgettes (depending on your hunger and preferance and also on the seize of the courgettes 😉 )
  • 10 – 12 cherry tomatoes, halved
  • 1 – 2 bell peppers, slices
  • 1 bunch asparagus (Optional; you can also use any other vegetables you might prefer with the courgettis)
  • 2 – 3 carrots, pealed into carrot noodles

Start by preparing the vegetables (tomatoes, pepper, asparagus or/+ any veg you like) for the pad thai zoodles bowl. Chop and slice them up and put to the side into a bowl while making the courgette noodles. You can prepare the zoodles using a spiralizer but if you don´t have one, it´s no problem bc it´s not necessary 😀 simply use a simple pealer and peal (may end up a little thicker like fettucini but delish anyway + it´s a bit of workout;) ). Do the same with the carrots and then place the courgette and carrot noodles in a bowl with the veggies and continue by preparing the sauce (recipe below). Pour the sauce onto the courgetti and veggies and mix until well combined. Top it with the tamari roasted almonds (recipe below too) and enjoy 😀


  • 2 -3 tbs raw almond butter
  • 1 cup (canned) coconut milk
  • 2 – 3 dates, preferably medjool dates
  • Juice of 1 sweet lime
  • 1 – 2 garlic cloves
  • 1 tbs tamari
  • 1 thump-siced piece of ginger

For the sauce, simply mix the ingredients in blender and blend until smooth.

Tamari-Roasted Almonds

  • 1 cup almonds
  • 1 – 3 tbs tamari

Preheat the oven to 180°C. Mix the almonds with the tamari in a bowl and put the marinated beauties into the oven for a few minutes until crunchy on top. Perfect also for a little snack ❤
