Blackberry Vanilla Pancakes

It´s #PancakeSunday time already again 😀 Crazy how the time flies and the weeks go by! It´s almost celebration time to bc…next Sunday it´s 1 year ago that I´ve started my project, my pancake project 😉 weekly, every Sunday, always another creation and never the same again until I don´t have any ideas left on my mind. This will be the end of my #PancakeSunday creations. 😉 But, at the moment, there is still no end in sight for my little, private pancake fun so don´t worry! The pancake pictures will continue every Sunday 😀 It´s has been a great time and yes, I´ve started the project months before I started my blog 😀 Crazy! Today, I made a new berrry creation for breakfast – my BUCKWHEAT BLACKBERRY VANILLA PANCAKES – I didn´t make a choco version myself this time bc I wasn´t in it the mood at all 😀 but the berrylicious pancakes were heavenly anyway – as usual 😉 And I had a super amazing time with mum (still have for we are talking about all that´s on our minds and reflect everything – I love that weekend conversations ❤ but lately, we talk almost every day about these things! I´m happy to call this gorgeous woman my mum – such a strong, inspirational one!) It´s a pleasure to slow down a little and focus on the most important time – quality/family time! BTW – late at night I posted a few words about HAPPINESS today :

“Happiness is waking up in the morning, having enough food to eat, spending time with loved ones, thinking without fear, breathing fresh air, starting over after a finished chapter, finding peace within yourself, exercising as much as you like, taking the time you need for anything you do, smiling though you feel like crying, crying to clear your eyes and mind from the dirt, learning new things everyday, seeing plants grow, looking into a beings eyes to see their passion for life, quitting bad habits, watching your favorite movies with your favorite people, going for a walk in the light evening sun while soft rain touches your skin, sleeping as long as your like to, staying up until your eyes are too tired to look, reading a good book while drinking a good tea, living without war, practicing yoga to feel the soul, laughing so hard your tummy hurts, feeling your heart beating in your chest, writing down what’s on your mind, talking all day long, keeping silent as well, closing your eyes to take a moment off, cuddling with your teddy bear, washing your face with clean water, creating things for fun, telling jokes, being able to be on your own, taking pictures, eating healthy, sharing love with the world, helping other beings bc it’s your natural instinct, making decisions for a better quality in life, stopping the hate in your heart from eating your energy, doing absolutely nothing for one moment, listening to the sound of the rain outside the window, watching snowflakes while sitting in your cosy room, walking without any direction just to see where your feet may take you, believing in more than you can see, trusting God, finding a new friend, painting your walls with bright colors, telling someone else positive things, loving life as much as you can, respecting others, sitting in a dark room with a tiny candle light, baking Christmas cookies and smelling the festive smell of celebrating life, focusing the future and avoiding to care about past times, caring about others.Happiness is nothing you can buy with any money. A feeling. The best moments are for free“.

It was very important for me to talk about this and tell what´s on my mind 😀 To share postive vibes 😀 and focus on the little things that make life beautiful 😀 Anyway, the pancakes were simply tasty and fruity ❤ I love blackberries a lot and enjoy the use them as often as I can 😀

You need:

  • 2/3 cup buckwheat flour (non-glutenfree idea is whole grain spelt flour – 1 cup; or other glutenfree ones like rice or brown millet flour)
  • 1 tbs baking powder
  • A pinch of salt
  • 3/4 dairy free milk, preferably glutenfree 😉
  • 2 tbs coconut oil
  • 1 handful blackberries, chopped (a little if needed)
  • 1 tsp vanilla
  • For the CHOCOLTATE version just add some raw caco powder or/and carob powder (as much as you like 😀 it´s up to you) and you can also add some grated raw choc
  • Sweetener is optional too
  • Oil for the pan (I use a coconut oil)

Mix the dry ingredients (flour, baking powder, salt) in a bowl, add the milk and oil and stir until well combined! Now you can add the remaining and desired ingredients (blackberries, vanilla, cacao, choc, carob, sweetener, … ) to taste. Heat oil in a pan and bake the pancakes on both sides 🙂

Topping : blackberries & nana slices + mint leave to garnish 😀 Keep it simple 😀
