Eat green or so 😉 Heatwave feeling (35°C – horror heatt for pale&proud vampire girl AnnaBelle) but I wanted soup instead of salad! Why not? As long as I am happy, healthy and nourished with ma greenz 😉 I made myself some PEA & MINT SOUP (2 days ago) 😀 buuut isn´t it funnier to have it twice a week, especially bc I wanted to have this soup once before but postponed it? Guess so, therefore I decided to prepare 2 different recipes bc I had 2 pea+mint soups on my TO DO list! I prepared Siobhan´s (@superfoodsiobhan) Creamy Vegan Pea and Mint Soup with drizzled coconut milk on Wednesday (2 days ago) and Lauren´s (@naturalnomad) Pea and Mint Soup with Soy Yogurt topping today (Friday) 😀 Both version turned out very yum and easy! I post them together below so you can also try out both of them 😀
“Creamy Vegan Pea and Mint Soup” (recipe by @superfoodsiobhan)
You need :
- 1/2 – 1 onion, chopped
- 1 clove of garlic, chopped
- 1 tbs coconut oil
- 3-4 cups frozen peas
- 2 – 2 1/2 cups hot water
- 1/2 cup fresh mint leaves
- 1/3 cup coconut milk (canned)
Start by heating a pot with coconut oil and add onion and garlic. Cooking them on a low heat until browned slightly, then put the lid on the pot and allow the onion and garlic to sweat until then have softened completely and are translucent. Add the water and the peas into the pot and bring to the boil, cook for 5 minutes and then remove from the heat to add the mint leaves. Let the mint infuse into the peas for about 10 minutes. Next, using a stick blender, blend the soup smooth (add more water if necessary for a thinner texture). Put the soup back onto the heat, and gently warm it back up, stirring in the coconut milk into it.
Serve with a drizzle more coconut milk and a few mint leaves 😀 and a couple of slices of thick bread on the side are also a good combo.
“Pea and Mint Soup” (recipe by @naturalnomad)
You need :
- 3 cups frozen peas
- 2 handful spinach
- 1/3 cup fresh mint leaves, finely chopped
- A pinch of salt
- 1/2 tsp lemon juice
- 3 cups hot water (boiling)
- 1-2 tsp superfood powder (Optional)
- Some vegan natural yoghurt alternative and mint leaves for the topping
Bring the water the boil in a pot, add peas, spinach, mint, salt, lemon juice and other desired superfood powder and place the pot back on medium heat until it begins to boil again while stirring very well. Once the soup is boiling, place the lid on and lower the heat, allowing it to simmer gently for around 10 minutes until the peas are completely cooked and softened. When the peas are cooked, remove the pot from the heat and blend the soup with a stick blender (you can also transfer the soup into a conventional blender instead). I also left some pea chuncks (didn´t blend that much) bc I wanted my soup to be creamy and not too liquid. Pour the smooth soup into a bowl and garnish with a bit yoghurt and mint leaves and serve with fresh warm bread or crackers.
