Whit Sunday, Post-ESC15 & Orange Oat Pancakes


Happy Whit Sunday!!! 😉 How are you all doing? Enjoying the weekend? I am 😉  a bit free time before I have to return to university routine 😛 Any of you watched the ESC yesterday evening? I fell asleep quite early so I didn´t watch it but I´m watching right now via rerun 😛 Sweden won (I don´t think he was the best! Really not!) and I think it´s really unfair that Germany and Austria gort 0 Points !!! That´s mean! Bc they were far better than some other songs! 😛 Anyway, it´s over and Austria is free of ESC 😀 The weather is rather bad at the moment and it’s a bit cold outside and not at all summer like! I´d love to go outside and eat ice cream but no! It´s too cold 😉 I need a little motivation over here!!! But hey, still got my beautiful #PancakeSunday creation – #vegan ORANGE OAT PANCAKES yummy 😀 The taste is really most important 😉 Enjoy your holidays 😉

You need :

  • 1 cup oat flour or oats (another idea is spelt or, glutenfree, rice, buckwheat or brown millet flour are options)
  • 1 tbs baking powder
  • 1/2 cup oat milk (Oatly; or other dairy free milk)
  • 1/2 cup orange juice,
  • 2 tbs coconut oil
  • a pinch orange zest 
  • a pinch of orange sugar
  • Sweetener is optional
  • You can also add orange flavor drops if you like
  • Oil for the pan (I use coconut oil)
  • For the DARK CHOCOLATE version add also 2 tbs raw cacao powder and 1 tbs carob powder and some chopped raw dark choc pieces

Mix the dry ingredients (flour, baking powder, salt) in a bowl, add the liquid (milk, juice) and oil and stir until well combined! Now you can add the still remaining ingredients to taste. Heat oil in a pan and bake the pancakes on both sides 🙂

Topping ideas are orange mash, fruits, choc chunks… Be creative! That’s the key 😉
