Mum´s Birthday Breakfast – BanAmoChocoCcino Pancakes :D

Celebration Time!!! Happy Birthday to my mummy
I’m one of these freaks that feels that need to bake birthday cakes and stuff for my closest ones (can’t stop this feeling 😉 I get really addicted in baking once there is one bday ahead or any other event). I thought a lot about what cake I shall prepare this year for mum’s big day – buuut noo! This is year is different 😀 it’s not just pretty though to prepare a cake for 2, especially when one of the two peps is still suffering from ed and doesn’t want to eat more than a slice, and the other is actually not that big eater anyway 😉 sooo, decided to make some very personal little thing for the best mummy ever : a pancake creation stack 😀 means Margaretha (my mum, that’s her name 😉 ) is having her own, special #PancakeDay today 😀 wohoo 😉 – BANANA CINNAMON CHOCOLATE CAPPUCCINO PANCAKES or, much easier to spell ;), BANAMOCHOCCINO (PAN) CAKE Stack 😀 puhhhh 😉 another example how you can make special events more special than ever 😉 and the coolest thing about it = here is the recipe to get yourself inspired 😀

You need :

  • 1 cup flour (I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 1 tbs baking powder
  • a pinch of salt
  • 1 cup dairy free milk (oat milk)
  • 2 tbs vegetable oil
  • 1/2 mashed or sliced (whatever you prefer) banana
  • some coffee powder or a coffee pad
  • chopped choc pieces
  • cinnamon (& Sonnentor Chai Küsschen Spice)
  • raw cacao powder
  • some agave as sweetener (if needed)
  • You can also add a bit vanilla and coffee flavor if you like!
  • Oil for the pan (I use coconut oil)

Heat the milk a little, remove from heat and add the coffee (pad) while waiting for the milk to cool down. Let soak for a few minutes and remove (if you use powder – no heating of the milk! just add to the dough). Mix the dry ingredients (flour, baking powder, salt, cinnamon, cacao powder) in a bowl, add the milk and oil and stir until well combined! Now you can add sweetener, mashed or sliced nana and choc chuncks into the dough. Heat oil in a pan and bake the pancakes on both sides 🙂 for topping I served nana slices, strawberbs and other fruits 😀 yum yum 🙂

I served the beautiful stack with Sonnentor Geburtstagstee (Birthday Tea) 😀
