Happy Easter Pancakes alla Reindling


Good Morning and Happy Easter to all of you 😀 Have a great holiday weekend and enjoy the time with your loved ones 😉 I spend the day with my beloved mum 😀 she is truly my everything

Today is a really special, festive day so I thought Easter Sunday has to be a unique #PancakeSunday 😉 asking for another special creation! Check 😉 I’m happy to show you my vegan HAPPY EASTER PANCAKES alla REINDLING! 😉 This beautiful and very, very delicious stack is made for 2 🙂 though I guess you can also eat it together with a 3rd person 😀 bc it’s pretty huge, especially with all the toppings and decorations 😀 The taste is a little like a traditional Austrian easter bread/cake called Reindling (weird name but delicious thing) and the shape (a hole in the middle) is inspired by this original, traditional bakery 😀 In my view it´s the most perfect way to celebrate the holidays 😀 I served it on green salad with carrot slices, nana slices, raspberries, raisins, walnuts and the cut out circles of the pancakes 😀 the decorations also needs to be mentioned : a beautiful, handmade, wooden Easter egg painted by Belarusian nuns 😀 I bought this beautiful art piece at our local Easter market at the Belarusian stall:D The lovely woman was super nice and we talked a bit in Russian though it was a little embarrsing bc I was baaaaad 😀 there´s still a lot to do until I will be good in talking Russian 😛 but it was fun 😀 and I own this arty egg 😀 Yippieee 😀 (btw the little, metalic looking eggs are chocolate eggs 😉 )

Here is the recipe for the special pancakes 🙂

You need :

  • 1 cup flour (I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 2 tbs baking powder
  • a pinch of salt
  • 1 tbs brown sugar or caramelized sugar
  • 1 cup dairy free milk (I used oat milk)
  • 2  tbs vegetable or nut oil
  • 1-2 tbs grated walnuts
  • a handful grated carrot
  • a pinch vanilla, lemon zest and cinnamon
  • a handful raisins or sultanas
  • some little pieces of chopped walnuts
  • Oil for the pan

Mix the dry ingredients (flour, baking powder, salt, sugar, grated nuts) in a bowl, add milk, carrot and oil and stir until well combined! Now, add the walnut pieces, raisins, vanilla, cinnamon and lemon zest to taste. Heat oil in a pan and bake the pancakes on both sides 🙂 With cookie cutter, cut out a circle in the middle of each pancake 😀 Place the pancakes on green salad for a spring time look! (btw you can eat the salad with the pancakes, nana and fruits mash, and so on – SURPRISE! It tastes awesome 😀 )

Top the pancakes with whatever you like 😀 carrots, fruits, nuts, … anything possible 😀
