Fresh n´Fruity :D Blood Orange Pancakes

Rainy first #PancakeSunday of Spring Time 😛 … the last couple of days were so beautiful! Perfect weather 😉 sunshine, blue skies, fresh air, … but today it really sucks 😀 but hey, let’s keep our heads up and focus on today’s fresh and fruity #vegan pancakes – BLOOD ORANGE PANCAKES in 2 versions (plain & chocolate) yummy, light (not at all bloody 😉 ) and with a little taste of holidays!!! My easter holidays are about to start in one week but I can’t wait – want my free time already to start but no, first some exam 😛 hope time flies 😉

You need :

  • 1 cup flour (I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 1 tbs baking powder
  • a pinch of salt
  • 1 cup dairy free milk (I used Oatly )
  • 2 tbs vegetable or nut oil
  • 1-2 tbs fine oats
  • Juice of 1/2 – 1 blood orange
  • 1 tsp orange sugar
  • orange or lime zest
  • some sweetener if needed
  • You can also add a bit some orange flavor drops, vanilla, … if you like!
  • Oil for the pan (I use coconut oil)
  • For the CHOCOLATE version, add some raw cacao powder!

Mix the dry ingredients (flour, baking powder, salt, oats) in a bowl, add milk, juice and oil and stir until well combined! Now you can some sweetener and the remaining ingredients to taste. Heat oil in a pan and bake the pancakes on both sides 🙂

Topping 😀 – I had some frozen blood orange chunks to give it a extra fresh n fruity upgrade 🙂 (and I also ate 2 strawberries & 1 nana 😉 but not on the picture 😉 )
