Fancy Easter Bunny Time :D Vegan Coco Carrot Cake


Getting up at 2 am 😀 Late night is the right time to prepare some bakery, don’t you think! Don’t know why but I felt like I had to bake 😀 yep, I’m weird and do unexpected things sometimes 😀 but let’s take a moment to admire this – #vegan COCO CARROT CAKE 😀 (got myself inspired by @that_belarusian_girl cupcake I prepared last week! for a little cake (for bigger one 2x the ingr.)

You need:

  • 250g (whole grain) spelt flour (for gluten free use brown millet or rice flour)
  • 1 1/3 tbs baking powder
  • a pinch of salt
  • 2 big grated carrots
  • 1-2 tbs coconut flakes
  • 1/8 l dairy free milk (I used rice milk)
  • 1 tsp chia seeds
  • water
  • Juice of 1/2 orange
  • 1/2 tsp orange or lime zest
  • 3-4 tbs melted coconut oil
  • 1 tbs nut butter/mash/mousse
  • 2 tbs jam (apricot)
  • agave or other natural sweetener to sweeten if needed

Preheat your oven to 180 °C! Mix chia seeds and a bit water and let soak for about 10 minutes while stirring it at times. Add it together with the other ingredients in a big bowl and blend until you have a creamy, well combined dough. Fill the dough into a prepared baking dish and bake for about 45 minutes. Never forget to watch your dough while baking – every oven is differnt!!!!
