Favorite Cake for the Cold Season – Chai Cake/Muffins

During the cold times of the year I like to enjoy cinnamon spicy muffins and cakes 😀 Yes, I know that I´m a huge (can´t find a word that explains how much I´m addicted) cinnamon junkie 😀 No secret and I also don´t try to hide it 😛 In love with Chai spices ❤ Now I take the chance to show you these creations a little 😀 Chai/Cinnamon bakery fits quite perfectly with pears, apples, plums, raisins, and sultanas – I tried it all (“mmmhhh”) and 😀 the rest is “recipe” 😉 Try it out 😛 won´t regret 😀

Pear Cinnamon Chai Cake

Chai Cake/Muffin Dough:

around 12 muffins or a little cake (for bigger: 2x the ingredients) // ca. 12 Muffins oder ein kleiner Kuchen*

You need:

  • 250g (whole grain) spelt flour (for gluten free use brown millet or rice flour)
  • 1 1/3 tbs baking powder
  • a pinch of salt
  • 1/8 l (dairy free) milk
  • 1 tbs chai spices / tea
  • 1 tbs butter (nut butter is about 2 tbs), marge or 3 tbs vegetable or nut oil
  • 80 – 90g brown sugar (depending on how sweet you want it; you can also use other sweeteners or add more)
  • 1 egg (or 1 tsp chia seeds mixed with some water)
  • chopped fruit; you can use 1/2 apple,1/2 pear or 2-4 plum
  • cinnamon
  • vanilla
  • Optional: vanilla flavor drops, raisins, sultanas, …

Preheat your oven to 180 °C! Add the spices into the milk and let soak for at least 7 minutes; then remove them. In another bowl (big one) mix flour, baking powder, salt and milk and add the other ingredients. Stir until you have a creamy dough before adding the fruit! Fill the dough into prepared muffin cups or cake pot, add some topping if you like and bake for about 20 minutes (muffins)/ 30-45 minutes (cake). Never forget to watch your dough while baking – every oven is differnt!!!!
