Today was again a big rehearsal day at theater and I decided to do what I love : Baking for my friends 😀 I guess there´s nobody really hating on chocolate no, sometimes you simply want to jump into a chocolate lake bc it´s too delicious! But I have a far better idea for those moments 😉 enjoying my super soft #vegan CHOCOLATE MUFFINS 😀 these are the most perfect way to satisfy chocolate cravings 🙂 inspired by @conniemaisie ‘s recipe – a lady you should definitely follow on Instagram with your stunning yumminess creations – I created my own 😀 be sure you try it out!!!!
- 1 cup spelt flour (for gluten free use brown millet or rice flour)
- 1/4cup raw cacao powder
- 1/4 cup brown sugar
- 1 tbs baking powder
- 1 cup dairy free milk (I used soy but feel free to use any you like)
- 3-4 tbs melted coconut oil
- 1 tbs chia seeds
- 2-3 tbs almond mash/butter/mousse/whatever you call it 😉
- You can also add nuts, choc chunks or berries; … into the dough.
Preheat your oven to 180°C. Mix the chia seeds with about 3-4 tbs water and let soak for a few minutes until it has a gel consistence (stir a little). Add with all ingredients in a big bowl and blend until you have a well combined, creamy dough! Fill the mixture into prepared muffin cups and bake in the preheated oven for 20-25 minutes (check them sometimes bc every oven is quite different!!!) After baking, let the little, awesome smelling beauties rest for about 1 or 2 hours before eating 😉 Enjoy – best with your favorite coffee or tea 😀
