Broccoli Soup

11008120_1404611913177690_2003926742_n                                                                        Green & Yummy 😀 This is how to celebrate birthdays on #VeganDay 😉 Me and my friend have a really good time enjoying natural, fresh dishes and watching “The Amazing Spider Man 2” – watch it! The movie is simply fantastic :D. I love cooking for friends and family and seeing that “WOW” moment in their eyes when they notice that the food they are tasting is completely veggie or vegan 😀 Some people simply don´t know how much delicious things you can prepare by just using plants and stuff; that there are so many great ways to nourish. It means a lot to me to make them see this side, the veggie side of life 😉 and I´m happy I can!Back to the lunch – CREAMY BROCCOLI SOUP ❤ The recipe is by the one & only @superfoodsiobhan 😀 If you are not following her, make sure you change that now or otherwise you´re missing out on something amazing!!! Serves 2-3

You need :

  • 1  head of broccoli (250g), chopped into small florets
  • 1 tbs coconut oil
  • 1 onion
  • 1 clove of garlic
  • 1/4 tsp chilli flakes
  • 1 cup of water
  • 1/2 can (200ml) full fat coconut milk
  • spices, herbs and salt

Steam the broccoli for approximately 15 minutes, until it’s very soft when tested with a knife. Whilst, heat a pot with the coconut oil, add the onion, garlic and chilli and cook on a low heat until the onion is translucent and soft. Once the broccoli is soft, add it to the pot with the water and the coconut milk and let it all cook for about 5 minutes until it’s well combined. Finally remove the pot from the heat and puree using a stick blender. Finally heat it one last time ans season with spices and herbs! Serve & Enjoy! 😀

BROCCOLI ARUGULA SOUP

2 serves
You need :
1/2-1 head broccoli, cut into small florets
1/2-1 package arugula
2-3 cups water
1/2 onion, diced
1 clove garlic, diced
1 tsp olive oil
Salt, pepper, spices, herbs to taste
Juice of 1/2 lemon
Heat the olive oil in a pan over medium heat, add onion and garlic and onion and cook until tender and fragrant, for about a few minutes. Next, add in the broccoli florets, roast for a few minutes until bright green. Then, pour the water into the pan, bring to a boil, lower the heat and cook covered for about 10 minutes, until the broccoli is fork tender. Let cool down a little before you add the soup into your blender together with arugula, lemon juice, herbs and spices of choice and blend until quite smooth and desired consistency. Transfer back to your pan if necessary to heat it again until preferred temperature.
