Berry’licious Oat Pancake Creations

Hello world & Happy #PancakeSunday!!! It’s really my favorite day 🙂 though the sun doesn´t shine today :/ BUT let’s look what I’ve prepared: made RASPBERRY-OAT PANCAKES 🙂 I did the same with blueberries a few weeks ago and it went quite well (very delicious) and today =

You need:

  • 1 cup flour (most perfect fit – oatflour – but in general, I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 1 tbs baking powder
  • a pinch of salt
  • Sweetener (optional)
  • 1 cup oat milk (for example Oatly)
  • 2 tbs vegetable or nut oil
  • 1-2 tbs fine oats
  • a handful raspberries or blueberries (or both; would be a good idea to try out too)
  • You can also add a bit spice or vanilla or lime flavor if you like!
  • Oil for the pan (I use coconut oil)

Mix the dry ingredients (flour, baking powder, salt, sugar, oats) in a bowl, add milk and oil and stir until well combined! Add the berries and stir them into the dough! (it makes the dough taste that AWESOME!) Heat oil in a pan and bake the pancakes on both sides 🙂

You can use any topping you may like – I had oats, berries and some jam 🙂 but I guess some chocolate sauce would also fit perfectly … 😀Enjoy 😀 Verrry Berrry 😉
