Advent Themed Pancake Creation :D a little throwback

10890639_897480490283640_1140128963_n                                                                                  Hello folks 😀 Sorry for my absence lately (all about university and I’m going to do a practicum for a few weeks! – starting very soon – so time is rare!) I show something special today… #TBT because I can’t wait for #PancakeSunday 🙂 who else? 😀 Here are my 4 Advent themed creations I made December 2014! You can also prepare them during the winter time (to keep a bit of the cozy Christmas feeling 🙂 and warm the heart) – GINGERBREAD PANCAKES, ORANGE-WALNUT CHOCOLATE PANCAKES (1st row, from left to right); APPLE-CHAI PANCAKES & VANILLA CRESCENTS PANCAKES (2nd row, from left to right).

Gingerbread Pancakes

you need:

  • 1 cup flour (I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 1 tbs baking powder
  • a pinch of salt
  • Sweetener (optional)
  • 1 – 1 1/4 cup dairy free milk
  • 2 tbs vegetable or nut oil
  • 2 tbs shredded nuts
  • gingerbread spices
  • 1 tsp raw cacao powder
  • cinnamon
  • vanilla
  • Oil for the pan (I use coconut oil)

Mix the dry ingredients (flour, baking powder, salt, shredded nuts) in a bowl, add the milk and oil and stir until well combined! Add the spices, cacao powder, sweetener and vanilla. Heat oil in a pan and bake the pancakes on both sides 🙂

You can use any topping you like – applesauce, orange slices, nuts and dried fruits are a good choice 😀 Enjoy with Glühwein 😀 – great match 😀


Orange-Walnut Chocolate Pancakes

you need:

  • 1 cup flour (I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 1 tbs baking powder
  • a pinch of salt
  • Sweetener (optional)
  • 1 – 1 1/4 cup chocolate soy milk (or mix soy milk with raw cacao powder; you can also add a orange nut teabag – soak in milk for – 10 minutes)
  • 2 tbs walnut oil
  • 2 tbs shredded walnuts
  • orange mash
  • 1 tsp orange sugar (you can also use orange zest)
  • cinnamon
  • vanilla
  • Oil for the pan (I use coconut oil)

Mix the dry ingredients (flour, baking powder, salt, shredded nuts) in a bowl, add the milk and oil and stir until well combined! Add the orange mash, sweetner, cinnamon, orange sugar and vanilla. Heat oil in a pan and bake the pancakes on both sides 🙂

You can use any topping you like; for example: nana slices, orange mash, walnuts and choc nibs. And the perfect drink… Orange Juice 😀


Apple-Chai Pancakes

you need:

  • 1You need :
    2/3 cup buckwheat flour (non-glutenfree idea is 1 cup whole grain spelt flour) // 2/3 Tasse Buchweizenmehl (nicht-glutenfreie Möglichkeit ist auch 1 Tasse Vollkorn-Dinkelmehl)
    1 tbs baking powder // 1 EL Backpulver
    3/4 cup water or dairy free milk of choice // 3/4 Tasse Wasser oder Pflanzenmilch der Wahl
    1 Chai Tea teabag // 1 Chai Teebeutel
    1 tsp cinnamon // 1 TL Zimt
    1/2 tsp nutmeg // 1/2 TL Muskatnuss
    1/2 tsp ground clove // 1/2 TL geriebene Nelken
    A pinch of cardamom // Eine Brise Kardamom
    1 cup pear/plum/persimmon/orange pieces // 1 Tasse Birnen/Pflaumen/Khaki/Orangen Stücke
    1 tsp chia seeds (Optional) // 1 TL Chia Samen (Optional)
    1 tsp vanilla (Optional) // 1 TL Vanille (Optional)
    1 tbs raw cacao and/or carob powder (Optional) // 1 EL Rohkakao- und/oder Karobpulver (Optional)
    Sweetener of choice as needed // Süßen nach Belieben
    Oil for the pan (Optional; coconut oil) // Öl für die Pfanne (Optional; Kokosöl)
    Soak the teabag in the water/milk for 10 minutes! While soaking, mix the dry ingredients (flour, baking powder, spices ) in a bowl. Remove the teabag and then, add the liquid in and stir until well combined! Now also add fruit pieces, vanilla, and other desired ingredients to taste and finish. Heat oil in a pan and bake the pancakes on both sides.
    Den Teebeutel in dem Wasser/der Milch für 10 Minuten ziehen lassen! Währenddessen, die trockenen Zutaten (Mehl, Backpulver, Gewürze) in einer Schüssel vermischen. Den Teebeutel entfernen und dann die Flüssigkeit hinzugeben und gut verrühren! Jetzt könnt ihr noch die Fruchtstücke, Vanille und alle weiteren Zutaten hinzufügen. Öl in der Pfanne erhitzen und die Pancakes auf beiden Seiten backen.

You can use any topping you like, as always 🙂 I had baked apple slices with cinnamon, applesauce (baked apple) and some walnuts (because I love nuts). I guess Apple Juice would fit perfectly, but I don´t like it that much :/ I prefer Apple Cinnamon Tea 😉


Vanilla Crescents Pancakes (gluten free)

you need:

  • 2/3 cup rice flour (you can also take buckwheat or millet flour)
  • 1 tbs baking powder
  • a pinch of salt
  • 1/2 tbs sugar
  • 1 tbs powdered sugar
  • 1 – 1 1/4 cup dairy free milk
  • 2 tbs vegetable or nut oil
  • 2 1/2 tbs shredded hazelnuts or almonds
  • gluten free, vegan vanilla pudding powder
  • a pinch vanilla sugar
  • vanilla flavor drops
  • vanilla
  • Oil for the pan (I use coconut oil)

Mix the dry ingredients (flour, baking powder, salt, sugar, shredded nuts) in a bowl, add the milk and oil and stir until well combined! Add the pudding powder, vanilla sugar, flavor drops and vanilla. Heat oil in a pan and bake the pancakes on both sides 🙂

The pancakes are quite hard to make because they are so soft that they almost fall apart. But they are just too good 😀 Top with some warmed fruits (warmed raspberries), vanilla and a pinch of powdered sugar.Enjoy ❤
