Coco-Nana Pancakes


Happy #PancakeSunday to everyone 😀 I love weekends but at moment it´s quite busy… a lot to learn, rehearsals, … :/ but let´s keep happy. Time for my vegan pancakes! 😀 Today I prepared a recipe I did a few weeks ago but this time  I tried to make them #glutenfree 🙂 COCO-NANA PANCAKES! A simply delicious option for a wonderful Sunday morning! Life is too good to eat bad 😉  have a great day 🙂 Here´s the recipe for my pancakes (both – original/glutenfree) :

You need:

  • 1 cup flour (I use whole grain spelt one; gluten free – buckwheat, brown millet or rice flour are options)
  • 1 tbs baking powder
  • a pinch of salt
  • Sweetener (optional)
  • 1 – 1 1/4 cup coconut milk or banana milk (you can also mix)
  • 2 tbs coconut oil
  • 2 tbs coconut flakes
  • vanilla
  • 1/2 mashed banana
  • For COCO-NANA CHOCOLATE PANCAKES just add 1 – 1 1/2 tbs raw cacao powder into the dough!
  • Oil for the pan (I use coconut oil)

Mix the dry ingredients (flour, baking powder, salt, coconut flakes) in a bowl, add the milk and oil and stir until well combined! Add sweetener, nana mash and vanilla. Heat oil in a pan and bake the pancakes on both sides 🙂

*NOTE: if you want to make COCO-NANA MARBLE PANCAKES, it´s now the time separate a part of the dough into another bowl and add some raw cacao powder (and the nana mash into the other part).

You can use any topping you like – I had nana slices and coconut flakes!

Try to enjoy the pancakes together with HOT COCO CHOCOLATE (raw cacao powder and warmed coconut milk or a mixture of (dairy free) milk and coconut milk), COCO COFFEE (coffee with coconut milk) or COCONUT CHAI TEA (search for it at local grocery stores 🙂 it´s delicious; you can also try to prepare ordinary chai tea with coconut milk 😉 )
